  • 1 cup granulated sugar
  • ½ cup packed light brown sugar
  • ½ cup vegetable oil
  • 2 large eggs
  • 1 cup pumpkin puree (canned or fresh)
  • ½ cup milk

Instructions

  1. Preheat your oven to 375°F (190°C). Prepare a muffin tin with liners or grease it.
  2. In a large bowl, combine flour, baking soda, salt, cinnamon, nutmeg, cloves, and ginger.
  3. In another bowl, whisk together granulated sugar, brown sugar, vegetable oil, eggs, pumpkin puree, and milk until smooth.
  4. Pour the wet mixture into the dry ingredients and stir until just combined; don’t overmix.
  5. Divide batter among muffin cups about two-thirds full.
  6. Bake for 18-22 minutes until a skewer inserted comes out clean.
  7. Let cool in the tin briefly before transferring to a wire rack.
