  • 1½ cups fresh apple cider
  • 4 tablespoons cold unsalted butter, diced
  • 2 large eggs
  • 1/3 cup granulated sugar
  • ½ cup brown sugar
  • 1/3 cup light olive oil
  • ¼ cup sour cream
  • 1½ teaspoons baking powder
  • ½ teaspoon baking soda
  • 1½ teaspoons ground cinnamon
  • Pinch allspice
  • 1/4 teaspoon coarse kosher salt
  • 1¾ cups all-purpose flour
  • 1 tablespoon butter, at cool room temperature
  • ¼ cup granulated sugar (for topping)
  • 1 teaspoon ground cinnamon (for topping)

Instructions

  1. Preheat your oven to 350°F and prepare a 9” square baking dish by greasing it and lining it with parchment paper.
  2. In a sauté pan, boil the apple cider until reduced by half, about 5 minutes. Add diced butter to the hot cider and whisk until melted.
  3. In a bowl, whisk together eggs, sugars, oil, sour cream, baking powder, baking soda, cinnamon, and salt until combined.
  4. Gradually add the cider mixture into the wet ingredients and mix well.
  5. Stir in the flour until just combined.
  6. Pour the batter into the prepared dish and bake for 22–25 minutes or until golden brown and cooked through.
  7. Allow to cool slightly before serving; top with melted butter and cinnamon sugar.
