  • 2 tsp ground cinnamon
  • 1/4 cup unsalted butter (melted)
  • 1/4 cup granulated sugar
  • 1 large egg
  • 1/2 tsp vanilla extract
  • 1/2 cup unsweetened applesauce
  • 1 1/2 cups finely diced Honeycrisp or Gala apples (about 2 medium)
  • 2 cups powdered sugar
  • 1/3 cup + 2 tbsp apple cider or juice

Instructions

  1. Preheat your oven to 400°F and grease a baking sheet with nonstick spray.
  2. In a medium bowl, whisk together flour, baking powder, salt, and cinnamon.
  3. In a large bowl, mix melted butter and sugar until combined. Add the egg, vanilla extract, and applesauce; whisk until smooth.
  4. Gradually stir the dry ingredients into the wet mixture until just combined. Gently fold in diced apples.
  5. Scoop tablespoon-sized portions onto the prepared baking sheet, spacing them apart.
  6. Bake for about 10 minutes until golden brown.
  7. While baking, prepare the glaze by whisking powdered sugar and apple cider/juice in a bowl until thin.
  8. Brush warm fritter bites with glaze and broil for an additional 2-4 minutes until bubbly.
  9. Let set for about 15 minutes before serving.
