  • 1 ½ cups all-purpose flour
  • 1 ½ teaspoons baking powder
  • 1 teaspoon ground cinnamon
  • ¼ teaspoon ground nutmeg
  • ¼ teaspoon kosher salt
  • ¾ cup unsalted butter (room temperature)
  • ¾ cup granulated sugar
  • 2 large eggs (room temperature)
  • 2 teaspoons vanilla extract
  • ½ cup whole milk
  • 2 ounces cream cheese (softened)
  • ½ cup granulated sugar
  • 2 cups heavy cream
  • ½ teaspoon vanilla extract
  • 1 pinch kosher salt

Instructions

  1. Prepare the apple filling by cooking diced apples with sugar, lemon juice, cinnamon, and butter until softened. Set aside.
  2. Preheat your oven to 350°F (175°C) and line a muffin tin with cupcake liners.
  3. Make the cupcake batter by mixing flour, baking powder, cinnamon, nutmeg, sugar, eggs, butter, milk, and vanilla until just combined.
  4. Fill each liner halfway with batter, add a spoonful of apple filling, then top with more batter.
  5. Bake for 20-25 minutes or until a toothpick comes out clean.
  6. For frosting, whip heavy cream and fold into prepared cream cheese mixture until smooth and fluffy.
  7. Once cooled completely, frost each cupcake generously.
