  • 3 boneless skinless chicken breasts
  • 16 ounces potato gnocchi
  • 5 tablespoons unsalted butter
  • 1 medium shallot
  • 2 cups chicken broth
  • ½ cup half-and-half
  • 2 cups fresh spinach
  • ½ cup Asiago cheese
  • ½ teaspoon kosher salt
  • ¼ teaspoon black pepper
  • Fresh parsley, chopped for garnish

Instructions

  1. Season chicken with salt and pepper. In a large skillet, melt 2 tablespoons of butter over medium heat and cook the chicken for about 8-10 minutes, until golden brown and cooked through.
  2. Remove chicken from the skillet and set aside. In the same skillet, melt remaining butter, add shallots, and cook until softened. Stir in garlic and flour; whisk for one minute.
  3. Gradually add chicken broth while whisking to avoid lumps. Cook until slightly thickened (3-5 minutes).
  4. Add half-and-half and gnocchi; stir to combine. Cook until gnocchi are tender (5-7 minutes).
  5. Stir in spinach and Asiago cheese until melted.
  6. Serve with sliced chicken on top, garnished with fresh parsley.
