Ingredients

  • 2 large baking potatoes
  • 2 tbsp olive oil
  • 1 tsp dried thyme
  • 1 tsp dried oregano
  • 1 tsp salt
  • 1 tsp black pepper
  • 0.5 tsp red chili flakes
  • 200g block of feta cheese
  • 1 head of garlic (top cut off)
  • 1 lemon, quartered
  • 1 tbsp honey
  • 20g fresh basil

Instructions

  1. Preheat your oven to 200C (390F).
  2. Wash and cube the potatoes; par-boil in salted water for 6-8 minutes.
  3. Drain and let them steam dry for a couple of minutes.
  4. In a baking dish, toss the potatoes with olive oil, thyme, oregano, salt, pepper, and chili flakes.
  5. Roast for about 30-40 minutes until golden brown.
  6. Add the feta in the center and squeeze half a lemon over it; roast for an additional 15 minutes.
  7. Combine mashed roasted garlic with leftover lemon juice and fresh basil; fold into the potatoes.
  8. Drizzle honey on top before serving.
