  • 2 pounds 80/20 ground beef
  • 1/2 cup plain dried breadcrumbs
  • 1 large egg
  • 1/2 cup milk
  • 2 teaspoons Kosher salt
  • 2/3 cup BBQ sauce (separated)
  • Assorted spices (chili powder, ground cumin, garlic powder)

Instructions

  1. Preheat your oven to 350°F (175°C) and line a rimmed sheet pan with nonstick aluminum foil.
  2. In a large mixing bowl, combine breadcrumbs, salt, chili powder, black pepper, ground cumin, garlic powder, milk, beaten egg, Worcestershire sauce, and liquid smoke. Mix until well combined.
  3. Add in the ground beef and finely minced onion; gently mix until evenly distributed. Shape the mixture into a narrow loaf on the prepared pan.
  4. Pour half of the BBQ sauce over the meatloaf and bake for 35 minutes. Pour remaining sauce on top and continue baking for an additional 25 minutes.
  5. Allow the meatloaf to rest for 15 minutes before slicing and serving.
