Ingredients
- 2.5 kg / 5 lb standing rib roast
- 1 onion, unpeeled, quartered
- 1 head of garlic, unpeeled, halved horizontally
- 5 sprigs thyme
- 3 sprigs rosemary
- 150g / 10 tbsp unsalted butter, softened
- 5 garlic cloves, minced
- 2 tsp finely chopped fresh rosemary (or 1 tsp dried)
- 2 tsp finely chopped fresh thyme (or 1 tsp dried)
- 2 tsp salt
- 1 tsp black pepper
- 1 1/2 cups beef broth/stock, low salt
- 2 1/2 cups dry red wine
- 1 tbsp cornflour/cornstarch (optional)
Instructions
- Preheat oven to moderate temperature.
- Let the rib roast sit at room temperature for about an hour before cooking. Pat dry and season generously with salt and pepper.
- Mix softened butter with minced garlic and herbs to create the garlic herb butter; slather over the roast.
- Place aromatics (onion, garlic head, herbs) in the roasting pan, then position the roast on top.
- Pour beef broth and wine around the roast; insert a meat thermometer into the thickest part of the meat.
- Roast until desired doneness is reached; allow resting for at least 20 minutes before slicing.
