  • 2 pounds cubed beef chuck
  • 1 medium onion
  • 3 sticks celery
  • 6 cloves garlic
  • 1 cup dry red wine
  • 3 cups beef broth
  • 1 pound Yukon Gold potatoes
  • 4 medium carrots
  • Salt & pepper to taste

Instructions

  1. Prep all ingredients: chop vegetables and dredge beef in flour.
  2. Heat olive oil in a heavy pot over medium-high heat; sear beef in batches until browned.
  3. Sauté onions and celery until softened; add garlic and tomato paste, cooking until fragrant.
  4. Pour in red wine, scrape the pot to deglaze, then stir in beef broth and Worcestershire sauce.
  5. Return seared beef to the pot with Italian seasoning and bay leaves; bring to a boil, cover, and simmer for 1 hour.
  6. Stir in diced potatoes and sliced carrots; cover and simmer for another hour until tender.
  7. Add frozen peas before serving; season with salt and pepper to taste.
