  • 2 pounds boneless, skinless chicken breasts (or thighs)
  • 6 oz egg noodles
  • 2 teaspoons freshly cracked black pepper
  • 1 1/2 teaspoons kosher salt
  • 1 teaspoon dried oregano
  • 1 teaspoon minced fresh thyme
  • 2 bay leaves

Instructions

  1. Heat olive oil in a large dutch oven over medium heat. Sauté onion, carrots, and celery for about 4 minutes until softened.
  2. Add minced garlic and sauté for an additional minute. Pour in chicken broth and add chicken along with seasonings. Bring to a simmer.
  3. Cover slightly and cook until chicken is tender (about 15 minutes). Shred the chicken and return it to the pot.
  4. Bring soup back to a low boil and stir in egg noodles. Cook for 6-7 minutes or until al dente.
