- 4 cups rhubarb (cut into 1/2" chunks)
- 3/4 cup granulated sugar
- 1/4 cup all-purpose flour
- 1 tsp cinnamon
- 1 cup all-purpose flour (for topping)
- 1/2 cup rolled oats
- 1/2 cup packed brown sugar
- 1/2 cup unsalted butter (melted)
Instructions
- Preheat the oven to 350°F (175°C).
- In a large mixing bowl, combine rhubarb chunks, granulated sugar, flour, and cinnamon. Toss until well-coated and transfer to an 8×8" baking dish.
- In another bowl, mix together flour, oats, and brown sugar. Add melted butter and mix until crumbly. Sprinkle evenly over the rhubarb filling.
