  • 1 cup small/medium shrimp, cleaned and deveined
  • 2 tbsp butter
  • 1 tbsp vegetable oil or sesame oil
  • 1 small red onion, chopped
  • 1 cup frozen peas and carrots
  • 2 eggs
  • 1 tsp brown sugar
  • 1 tsp sesame oil
  • 1 tsp oyster sauce
  • 2 tsp rice wine vinegar
  • 2 tbsp dark soy sauce
  • 1 tsp water
  • 1/4 tsp white pepper powder

Instructions

  1. Prepare cold cooked rice ahead of time for best texture.
  2. Whisk together the sauce ingredients in a bowl.
  3. Whisk eggs with salt and pepper in another bowl.
  4. Marinate shrimp with salt and half the sauce mix.
  5. Cook marinated shrimp in butter until pink; set aside.
  6. Scramble whisked eggs in the same pan; set aside.
  7. Sauté ginger, garlic, and onions in remaining butter and oil until fragrant.
  8. Add peas and carrots; cook until softened.
  9. Stir in cold rice gently to break apart lumps; add shrimp and scrambled eggs back to the pan.
  10. Pour remaining sauce over the mixture; toss on high heat until evenly combined.
