  • ¾ cup unsalted butter
  • ½ cup Biscoff cookie butter spread
  • 1 cup brown sugar
  • ½ cup granulated sugar
  • 2 large eggs
  • 2 cups all-purpose flour
  • ⅔ cup white chocolate chips
  • 68 Biscoff cookies (for topping)

Instructions

  1. Preheat your oven to 350°F (175°C) and grease a 9” x 9” square pan lined with parchment paper.
  2. Melt the unsalted butter and allow it to cool slightly. In a mixing bowl, combine melted butter, Biscoff spread, brown sugar, and granulated sugar; whisk until smooth.
  3. Add eggs and vanilla extract; mix until well combined.
  4. Gradually add flour, baking powder, salt, and cinnamon; fold in white chocolate chips until just combined.
  5. Pour batter into the prepared pan and top with broken pieces of Biscoff cookies.
  6. Bake for 30-35 minutes until the edges are golden brown; a toothpick inserted should come out with moist crumbs.
  7. Cool completely before cutting into squares.
