  • 1 tsp olive oil
  • ⅓ cup white onion, chopped
  • 1 jalapeño, finely chopped
  • 2 15 oz black beans, drained and rinsed
  • ¾ cup tomato, chopped
  • 1 tsp garlic powder
  • 1 tsp chili powder
  • 1 tsp paprika
  • 1 tsp cumin
  • ½ tsp salt
  • 2 Tbsp hot sauce
  • 6 large tortillas (burrito size)
  • 6 tostadas
  • 6 fajita size tortillas (to close the wrap)
  • ⅓ cup sour cream
  • 1½ cup cheese, shredded
  • 1½ cup romaine, shredded
  • ½ cup salsa (optional)
  • 1 avocado, sliced thin (optional)
  • 2 Tbsp cilantro, chopped

Instructions

  1. Prepare your ingredients: rinse black beans, chop onions, jalapeños, and tomatoes.
  2. In a skillet, heat olive oil over medium. Sauté onions for 3 minutes until translucent. Add garlic powder, chili powder, paprika, cumin, salt, jalapeños, tomatoes, black beans, and hot sauce; simmer briefly.
  3. On a large tortilla, layer black bean mixture, cheese, sour cream, romaine lettuce, avocado (if using), and place a tostada on top.
  4. Fold the tortilla around the filling and add a small fajita-sized tortilla on top to secure.
  5. In a clean skillet coated with oil, cook the wrap folded side down for 3 minutes until browned. Flip and cook the other side for another 3 minutes.
  6. Repeat until all wraps are made and serve warm.
