Ingredients
- 1 cup unsalted butter (melted)
- ½ cup granulated sugar
- 2 cups all-purpose flour
- 8 ounces cream cheese (softened)
- 1 cup granulated sugar
- 3 cups blueberries (fresh or frozen)
- Zest and juice of one lemon
- 2 large eggs
Instructions
- Preheat your oven to 350ºF (177ºC) and prepare an 8" x 8" baking pan by lining it with foil for easy removal.
- In a bowl, mix melted butter, sugar, lemon zest, and salt; add flour to form the crust. Press mixture into the pan.
- For the filling, beat cream cheese and sugar until smooth. Mix in lemon zest and juice, followed by eggs and flour until just combined.
- Pour filling over the crust and top with blueberries. Bake for about 30 minutes or until set.
