  • 1 cup unsalted butter (melted)
  • ½ cup granulated sugar
  • 2 cups all-purpose flour
  • 8 ounces cream cheese (softened)
  • 1 cup granulated sugar
  • 3 cups blueberries (fresh or frozen)
  • Zest and juice of one lemon
  • 2 large eggs

Instructions

  1. Preheat your oven to 350ºF (177ºC) and prepare an 8" x 8" baking pan by lining it with foil for easy removal.
  2. In a bowl, mix melted butter, sugar, lemon zest, and salt; add flour to form the crust. Press mixture into the pan.
  3. For the filling, beat cream cheese and sugar until smooth. Mix in lemon zest and juice, followed by eggs and flour until just combined.
  4. Pour filling over the crust and top with blueberries. Bake for about 30 minutes or until set.
  5. Allow cooling completely before slicing into bars.
