  • 2 cups graham cracker crumbs
  • 1/4 cup granulated sugar
  • 1/2 cup unsalted butter (melted)
  • 4 (8 oz.) packages cream cheese (softened)
  • 1/2 cup sour cream
  • 3 large eggs
  • 2 cups granulated sugar
  • 1/2 tablespoon vanilla extract
  • 1/2 tablespoon butter flavoring
  • 1/2 cup butterscotch sauce
  • 1/2 cup butterscotch chips
  • 8 oz. tub of cool whip

Instructions

  1. Preheat oven to 325°F (160°C).
  2. In a bowl, mix graham cracker crumbs, sugar, and melted butter. Press into the bottom of an 8-inch springform pan.
  3. Beat cream cheese until smooth; add sour cream and mix well.
  4. Gradually add sugar, mixing until combined, then beat in eggs one at a time.
  5. Stir in vanilla extract, butter flavoring, butterscotch sauce, cream soda, and butterscotch chips until blended.
  6. Pour filling over crust; smooth top with a spatula.
  7. Bake for about 60 minutes until edges are set and center is slightly jiggly.
  8. Cool in the oven with the door ajar for an hour before refrigerating for at least 4 hours or overnight.
  9. Before serving, top with cool whip and drizzle with butterscotch sauce.
