  • 1 Tbsp cooking oil
  • 1 bell pepper
  • 1 tsp smoked paprika
  • 1/2 tsp dried oregano
  • 1/2 tsp dried thyme
  • 1/4 tsp garlic powder
  • 1/4 tsp onion powder
  • 1/8 tsp cayenne pepper
  • 15 oz. can fire roasted diced tomatoes
  • 1 cup long grain white rice
  • 1.5 cups chicken broth
  • Green onions for garnish

Instructions

  1. Slice the sausage into thick rounds and sauté in a deep skillet with cooking oil over medium heat until browned.
  2. Dice the bell pepper and add it to the skillet, sautéing for an additional minute.
  3. Stir in spices (smoked paprika, oregano, thyme, garlic powder, onion powder, cayenne pepper) and toast them for about a minute.
  4. Add fire roasted diced tomatoes (with juices), rice, and chicken broth; stir well to combine.
  5. Cover the skillet and bring to a boil on medium-high heat. Once boiling, reduce heat to low and simmer for 20 minutes.
  6. After simmering, let rest covered for another five minutes before serving. Garnish with sliced green onions.
