  • 2 sweet potatoes
  • 1 ½ cups uncooked rice
  • 1 cup chopped onions
  • 2 bell peppers, chopped
  • 1 avocado, cubed
  • 2 tbsp Cajun seasoning
  • 2 tbsp olive oil
  • For Tahini Sauce: 1/3 cup tahini
  • 1 tbsp garlic powder
  • juice of 1 lemon

Instructions

  1. Cook rice according to package instructions.
  2. Preheat oven to 415°F. On a baking sheet lined with parchment paper, toss sweet potato cubes with olive oil and Cajun seasoning. Bake for about 20 minutes until tender.
  3. In a skillet over medium heat, sauté minced garlic until fragrant. Add optional onions and bell peppers. Stir in drained black beans and heat through.
  4. Assemble bowls starting with rice, then add roasted sweet potatoes and black beans. Top with avocado cubes and drizzle with tahini sauce.
