Ingredients
- 2 sweet potatoes
- 1 ½ cups uncooked rice
- 1 cup chopped onions
- 2 bell peppers, chopped
- 1 avocado, cubed
- 2 tbsp Cajun seasoning
- 2 tbsp olive oil
- For Tahini Sauce: 1/3 cup tahini
- 1 tbsp garlic powder
- juice of 1 lemon
Instructions
- Cook rice according to package instructions.
- Preheat oven to 415°F. On a baking sheet lined with parchment paper, toss sweet potato cubes with olive oil and Cajun seasoning. Bake for about 20 minutes until tender.
- In a skillet over medium heat, sauté minced garlic until fragrant. Add optional onions and bell peppers. Stir in drained black beans and heat through.
- Assemble bowls starting with rice, then add roasted sweet potatoes and black beans. Top with avocado cubes and drizzle with tahini sauce.
