Ingredients

  • 2 cups cherry tomatoes
  • 1 tablespoon olive oil
  • 2 tablespoons basil pesto
  • 5 cloves garlic (minced)
  • 1 cup sour cream
  • 8 ounces fresh mozzarella (cut into chunks)
  • 8 ounces shredded provolone cheese
  • ¼ cup freshly grated parmesan cheese
  • Fresh basil for garnish

Instructions

  1. Preheat the oven to 400°F.
  2. In a baking dish, combine whole cherry tomatoes with olive oil, pesto, minced garlic, salt, and pepper. Bake for 15 minutes until tomatoes burst.
  3. In a mixing bowl, blend sour cream with chopped basil and cheeses until well mixed.
  4. Add the cheese mixture on top of roasted tomatoes, gently combining them. Arrange halved cherry tomatoes on top.
  5. Return to the oven for another 20 minutes until the cheese is melted and bubbly.
