  • 2 1/2 tablespoons oil
  • 2 pounds chuck steak (cubed)
  • 1 large onion (chopped)
  • 1 large bell pepper (chopped)
  • 3 cloves garlic (minced)
  • 1 tablespoon tomato paste
  • 2 large tomatoes (diced)
  • 2 tablespoons all-purpose flour
  • 1 teaspoon salt
  • 1/2 teaspoon pepper
  • 1 teaspoon ground cumin
  • 1 teaspoon chili powder
  • 2 cups beef broth

Instructions

  1. Heat oil in a heavy pot over medium heat. Add chopped onions and cook until translucent, then add minced garlic and stir until fragrant.
  2. Increase heat and add cubed chuck steak, browning on all sides. Add the bell pepper and sauté for a couple of minutes.
  3. Stir in the tomato paste followed by diced tomatoes, cooking for an additional few minutes.
  4. Sprinkle flour over the mixture and stir to combine. Pour in beef broth and season with salt, pepper, cumin, and chili powder. Bring to a boil.
  5. Reduce heat to low, cover the pot, and let it simmer for about 2 hours, stirring occasionally to prevent sticking.
  6. Once the meat is tender, serve warm garnished with fresh cilantro.
