  • ¾ cup granulated sugar
  • 3 large eggs
  • 2 cups shredded carrots
  • 8 oz cream cheese (cold)
  • 8 Tbsp butter (room temperature)
  • 1 cup powdered sugar

Instructions

  1. Preheat your oven to 375°F and line a jelly roll pan with parchment paper.
  2. Whisk together flour, baking powder, baking soda, salt, and spices in one bowl; set aside.
  3. In another bowl, beat eggs, sugar, oil, and vanilla until combined. Gradually mix in dry ingredients and fold in shredded carrots.
  4. Spread batter evenly in the pan and bake for 10–13 minutes until springy.
  5. Roll the warm cake in the parchment paper and let cool for 10 minutes.
  6. Beat cream cheese and butter until smooth; add powdered sugar and vanilla.
  7. Unroll the cake gently, spread frosting over it (leaving an inch at one end), re-roll tightly, wrap in plastic wrap, and chill for at least an hour before slicing.
