- 1 large egg yolk

- Optional: Maple extract
Instructions
- Prepare brown butter by melting it in a saucepan until golden brown; cool.
- Blot pumpkin puree with paper towels to remove excess moisture.
- Whisk together flour, spice blend, baking soda, and salt in one bowl. In another bowl, mix cooled brown butter, brown sugar, and maple syrup until smooth; then add egg yolk, pumpkin puree, vanilla, and optional maple extract.
- Gradually combine wet and dry ingredients until just mixed; do not overmix.
- Chill dough for at least 8 hours or overnight.
- Preheat oven to 350°F (177°C); line baking sheets with parchment paper.
