  • 1/2 tsp baking soda
  • 1/2 tsp baking powder
  • 1/2 tsp salt
  • 1/2 tsp pumpkin pie spice for topping

Instructions

  1. Preheat oven to 350°F (175°C).
  2. In a bowl, whisk together flour, baking soda, baking powder, salt, and pumpkin pie spice.
  3. In another bowl, cream together softened butter and sugars until fluffy.
  4. Add egg yolks one at a time, then mix in vanilla and pumpkin puree until combined.
  5. Gradually incorporate dry ingredients until just mixed.
  6. Drop rounded tablespoons of dough onto a lined baking sheet.
  7. Sprinkle with spiced sugar before baking.
  8. Bake for about 12 minutes until edges are golden but centers are soft.
  9. Cool on the baking sheet briefly before transferring to wire racks.
