  • 2 tablespoons butter
  • 2 boneless skinless chicken breasts (or 2 cups diced rotisserie chicken)
  • 1 teaspoon Italian seasoning
  • 2 ½ cups chicken broth
  • 1 ¼ cups uncooked white long-grain rice
  • 23 cups fresh broccoli florets
  • 10.5 oz condensed cream of chicken soup
  • ½ cup milk
  • 2 cups shredded cheddar cheese (divided)
  • 1 cup crushed Ritz crackers

Instructions

  1. Preheat your oven to 350°F.
  2. Cut chicken into bite-sized pieces, season with Italian seasoning, salt, and pepper. In a large pot, melt butter over medium heat and cook chicken until golden brown.
  3. Add chicken broth and rice to the pot; bring to a boil, then reduce heat and simmer for about 6 minutes.
  4. Layer fresh broccoli on top of the rice; cover and cook for another 9 minutes or until liquid is absorbed.
  5. Remove from heat, let sit covered for 10 minutes. Stir in cooked chicken, cream of chicken soup, milk, sour cream, thyme, garlic powder, and half of the cheese.
  6. Transfer mixture to a greased casserole dish and top with remaining cheese and crushed crackers.
  7. Cover with foil and bake for about 15 minutes until heated through.
