  • 2 tablespoons olive oil
  • 1 yellow onion, thinly sliced
  • 1 red bell pepper, thinly sliced
  • 1 green bell pepper, thinly sliced
  • 1 1/4 pounds boneless skinless chicken breasts, thinly sliced
  • 1 1/2 teaspoons Italian seasoning
  • 1/2 teaspoon smoked paprika
  • Salt and black pepper to taste
  • 1 cup shredded provolone cheese

Instructions

  1. In a large skillet over medium-high heat, heat 1 tablespoon olive oil. Add the sliced onions and bell peppers; season with salt and pepper. Sauté until tender and then remove from the skillet.
  2. In the same skillet, add the remaining olive oil and the sliced chicken along with Italian seasoning and smoked paprika. Cook until browned on one side before stirring.
  3. Once the chicken is fully cooked, return the sautéed vegetables to the skillet and mix well. Top with shredded provolone cheese.
  4. Cover the skillet until the cheese melts completely. Serve immediately.
