- 1/4 cup all-purpose flour
- 2 Tbsp olive oil
- 1 Tbsp unsalted butter
- 8 oz brown button mushrooms
- 3/4 cup dry marsala wine
- 3/4 cup reduced-sodium chicken stock
- 1/2 cup heavy whipping cream
- Fresh parsley for garnish
Instructions
- Cut chicken breasts in half lengthwise to make even cutlets. Pound them to a thickness of 1/3 inch, then season with salt and pepper before dredging in flour.
- In a heavy-bottomed pan, heat olive oil and butter over medium heat. Cook the dredged chicken for about 3-4 minutes per side until golden brown and cooked through (internal temperature should reach 165°F). Set aside.
- In the same pan, sauté mushrooms until golden brown. Add onion powder and minced garlic; cook until fragrant.
- Pour in marsala wine, scraping the bottom of the pan to deglaze. Allow it to reduce before adding chicken stock and cream; simmer until slightly thickened.
