Ingredients
- 8 oz cooked shredded chicken breast
- 1/2 cup black beans (canned)
- 1/2 cup corn
- 1/4 cup diced red bell pepper
- 1/4 cup diced green onions
- 1 jalapeno pepper (diced)
- 1 cup Monterey Jack cheese (shredded)
- 10–12 egg roll wrappers
- Olive oil for frying
Instructions
- In a skillet over medium heat, heat olive oil and add the chicken, black beans, corn, red bell pepper, green onions, jalapeno pepper, and spices. Cook until heated through.
- Assemble each eggroll by placing about two tablespoons of filling in the center of an egg roll wrapper. Fold and roll tightly, sealing edges with water if needed.
- Heat oil in a frying pan over medium-high heat. Fry eggrolls seam side down until golden brown on all sides. Drain on paper towels.
- Serve hot with your favorite dipping sauces.
