  • 6 tablespoons (85 grams) unsalted butter, melted
  • 1 1/2 cups buttermilk
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1 cup (170 grams) semisweet chocolate chips
  • 1/4 cup (32 grams) all-purpose flour
  • 2 tablespoons brown sugar
  • 1/2 cup toffee bits (such as Heath brand or homemade)
  • 1 tablespoon butter, at room temperature

Instructions

  1. Preheat your oven to 375°F and line a muffin tin with paper cups.
  2. In one bowl, mix flour, brown sugar, cocoa powder, espresso powder, baking powder, baking soda, and salt.
  3. In another bowl, combine melted butter, buttermilk, eggs, and vanilla. Add this to the dry ingredients.
  4. Fold in chocolate chips gently.
  5. For the topping, mix additional flour, brown sugar, toffee bits, and butter until crumbly.
  6. Fill muffin cups two-thirds full with batter and sprinkle with topping.
  7. Bake for about 20 minutes until a toothpick comes out clean.
