Ingredients

Scale
  • 1/2 cup unsalted butter, melted
  • 1 cup granulated sugar
  • 2 large eggs
  • 1 tsp vanilla extract
  • 1/3 cup unsweetened cocoa powder
  • 1/2 cup all-purpose flour
  • 1/4 tsp salt
  • 1/4 tsp baking powder
  • 1 1/2 cups heavy whipping cream, chilled
  • 8 oz semisweet chocolate, finely chopped

Instructions

  1. Preheat oven to 350°F (175°C) and grease a 9×9 inch baking pan.
  2. In a bowl, whisk together melted butter and sugar until combined. Add eggs one at a time, mixing well after each addition. Stir in vanilla.
  3. In another bowl, sift together cocoa powder, flour, salt, and baking powder. Gradually incorporate dry ingredients into the wet mixture until just combined.
  4. Pour brownie batter into the prepared pan and spread evenly. Bake for 20-25 minutes until a toothpick comes out with moist crumbs.
  5. For the mousse, melt semisweet chocolate in a heatproof bowl over simmering water until smooth. Let it cool slightly.
  6. Whip heavy cream in a separate bowl until soft peaks form. Fold half into the melted chocolate, then gently fold in the remaining whipped cream.
  7. Once brownies have cooled completely, pour mousse over them and chill for about 3 hours before serving.
