  • 1/2 cup water
  • 4 egg whites
  • Pinch cream of tartar
  • 3 tablespoons plus 1 teaspoon granulated sugar (for meringue)
  • 2 egg yolks
  • 1/2 teaspoon vanilla extract
  • Powdered sugar (for serving)

Instructions

  1. Preheat oven to 375°F (190°C). Spray ramekins with cooking spray and dust with granulated sugar if desired.
  2. In a mixing bowl, whisk together powdered sugar, cocoa powder, and flour.
  3. Warm low-fat milk and water in a saucepan, then gradually mix into dry ingredients until smooth.
  4. Beat egg whites with cream of tartar until soft peaks form, then gradually add granulated sugar until stiff peaks form.
  5. Gently fold one-third of the meringue into the chocolate mixture, followed by the remaining meringue until combined without deflating.
