  • 1/2 cup (40 g) cocoa powder (Dutch process)
  • 1/2 tsp salt
  • 1/2 tsp baking powder
  • 3/4 cup (168 g) unsalted butter, softened
  • 3/4 cup (165 g) light brown sugar, packed
  • 1/4 cup (50 g) granulated white sugar
  • 2 egg yolks, at room temperature
  • 1 1/2 tsp vanilla bean paste or extract
  • 1 cup (200 g) semi-sweet chocolate chips
  • 1/2 cup (120 ml) heavy whipping cream
  • nonpareils for sprinkling on top (optional)

Instructions

  1. Preheat your oven to 350°F (175°C) and line baking sheets with parchment paper.
  2. In a bowl, whisk together flour, cocoa powder, salt, and baking powder.
  3. Cream softened butter with light brown sugar and granulated sugar until fluffy.
  4. Mix in egg yolks and vanilla until well combined.
  5. Gradually add dry ingredients to the wet mixture until just combined.
  6. Form dough balls and create indentations using your thumb.
  7. Bake for about 10 minutes; edges should be firm while centers remain soft.
  8. Prepare ganache by melting chocolate chips with heavy cream until smooth.
  9. Fill each thumbprint with ganache once cookies cool.
