  • 2 to 3 tablespoons cinnamon sugar

Instructions

  1. Preheat oven to 350°F (175°C) and prepare mini loaf pans by greasing and lining them with parchment paper.
  2. In a mixing bowl, whisk together the egg, granulated sugar, brown sugar, pumpkin, canola oil, and vanilla until smooth.
  3. In another bowl, combine the flour, baking powder, baking soda, pumpkin pie spice, and salt. Gradually add this dry mix to the wet ingredients until just combined.
