- 5 strips bacon
- 3 1/2 lbs beef chuck
- 4 tablespoons unsalted butter
- 1 yellow onion
- 3 large carrots
- 5 garlic cloves
- 2 cups Burgundy wine
- 2 cups beef stock
- 10 oz frozen pearl onions
- 16 oz cremini mushrooms
- Fresh thyme
- Bay leaves
- Salt
- Pepper
Instructions
- Preheat the oven to 350°F.
- In a Dutch oven, cook chopped bacon over medium-low heat until browned; remove and set aside.
- Sear seasoned beef chunks in the bacon fat on medium-high heat until browned; remove from pot.
- Sauté chopped onions and carrots in remaining fat for about 3 minutes; add minced garlic and tomato paste, cooking until darkened.
- Stir in flour, then add wine while scraping the bottom of the pot to release browned bits. Add beef stock, bouillon, thyme, bay leaves, beef, and bacon back to the pot.
- Cover and bake for about 2½ hours.
- Meanwhile, sauté mushrooms and pearl onions until browned. Add them to the pot after initial cooking time and return to oven for another 45–60 minutes until beef is tender.
