  • ⅓ cup olive oil
  • 1 red bell pepper, sliced
  • 1 serrano pepper (or 2 jalapenos), sliced
  • ½ cup chopped cilantro
  • 2 carrots, sliced
  • 1 russet potato, sliced (optional)
  • 6 garlic cloves, halved
  • 1 tablespoon tomato paste

  • turmeric

Instructions

  1. Heat a sauté pan over medium heat and add olive oil. Sauté the sliced vegetables for 2–3 minutes.
  2. Add the spices and tomato paste; cook for an additional 2–3 minutes until fragrant.
  3. Stir in half the cilantro and water; cover and simmer for 12–15 minutes until veggies are tender.
  4. Lightly season the salmon fillets with salt and place them in the pan; spoon sauce over them.
  5. Cover and cook on low heat for 20–25 minutes, basting with sauce halfway through.
  6. Serve garnished with lemon slices and fresh cilantro.
