  • 360 g brewed black coffee (or 2 tsp instant coffee)
  • 360 g all-purpose flour
  • 300 g granulated sugar
  • 150 g dark brown sugar
  • 75 g unsweetened Dutch cocoa powder
  • 3 large eggs
  • 270 g sour cream
  • 400 g butter (for frosting)

Instructions

  1. Preheat the oven to 350°F (175°C). Grease and flour three 8-inch round baking pans.
  2. In one bowl, mix flour, cocoa powder, baking powder, baking soda, cornstarch, and salt. In another bowl, combine coffee, sugars, vegetable oil, sour cream, eggs, and vanilla.
  3. Gradually mix dry ingredients into wet until just combined. Divide batter among prepared pans.
  4. Bake for about 30 minutes or until a toothpick comes out clean. Cool in pans for 10 minutes before transferring to wire racks.
  5. For the buttercream: Beat room temperature butter until creamy, then gradually add powdered sugar and mix in vanilla and cooled coffee until smooth.
  6. Assemble the cake by layering with buttercream between each layer and frost the top and sides.
