  • 1 sleeve Oreo cookies (about 16 cookies), cream removed
  • 1/2 cup butter, room temperature
  • 1/2 cup oil
  • 1 1/2 cups sugar
  • 4 eggs, room temperature
  • 2 tablespoons vanilla extract
  • 3 cups cake flour
  • 1 teaspoon salt
  • 2 1/2 teaspoons baking powder
  • 1 1/3 cups buttermilk
  • 1 cup unsalted butter (for frosting)
  • 3 1/2 cups powdered sugar
  • 4 tablespoons whole milk
  • 23 tablespoons espresso powder (to taste)
  • Additional sleeve of Oreos, crushed (for garnish)

Instructions

  1. Preheat oven to 325°F. Grease and flour three 6-inch or two larger cake pans.
  2. Separate Oreo cookies from cream; crush cookies in a plastic bag.
  3. Beat softened butter and oil until smooth; gradually add sugar and mix until fluffy.
  4. Incorporate eggs one at a time along with vanilla extract.
  5. In another bowl, sift together flour, salt, and baking powder; alternate mixing in dry ingredients with buttermilk until just combined. Fold in crushed Oreos.
  6. Divide batter among prepared pans and bake for about 30 minutes or until a toothpick comes out clean.
  7. For the frosting, cream together unsalted butter, powdered sugar, milk, vanilla extract, and salt; mix in espresso powder to taste.
  8. Assemble the cake by layering with frosting in between each cake layer and covering the entire cake with remaining frosting. Decorate with crushed Oreos.
