  • 1/4 cup applesauce
  • 2 tablespoons coconut oil (melted and cooled)
  • 2 large eggs
  • 1 1/2 cup all-purpose flour (or gluten-free all-purpose flour)
  • 1 1/2 teaspoons baking powder
  • 1/4 teaspoon salt
  • 1/2 cup mini chocolate chips (or regular)

Instructions

  1. Preheat oven to 350°F and line a muffin tin with liners.
  2. Blend wet ingredients: cottage cheese, maple syrup, vanilla extract, pumpkin puree (if making pumpkin muffins), and eggs until smooth.
  3. In a mixing bowl, combine dry ingredients: flour, baking powder, salt (and pumpkin spice if using).
  4. Pour blended wet ingredients into the dry mixture and fold in chocolate chips gently.
  5. Fill muffin liners about two-thirds full with batter.
  6. Bake for 25–30 minutes until golden brown.
