- 300 g pasta (penne or your choice)
- 1 tablespoon olive oil
- 450 g chicken breast fillets, cut into bite-sized pieces
- 30 g unsalted butter
- 1 medium shallot, diced
- 2 large garlic cloves, minced
- 250 ml chicken stock
- 150 g light cream cheese
- 2 tablespoons buffalo wing sauce
- 2 tablespoons ranch dressing
- 100 g cheddar cheese, grated
- 100 g Monterey jack cheese, grated
- Salt and pepper to taste
Instructions
- Cook the pasta according to package instructions for one minute less than recommended. Reserve a cup of pasta water before draining.
- In a large pan over medium heat, heat olive oil and melt butter. Add chicken pieces; cook for about 6-7 minutes until thoroughly cooked.
