  • 300 g pasta (penne or your choice)
  • 1 tablespoon olive oil
  • 450 g chicken breast fillets, cut into bite-sized pieces
  • 30 g unsalted butter
  • 1 medium shallot, diced
  • 2 large garlic cloves, minced
  • 250 ml chicken stock
  • 150 g light cream cheese
  • 2 tablespoons buffalo wing sauce
  • 2 tablespoons ranch dressing
  • 100 g cheddar cheese, grated
  • 100 g Monterey jack cheese, grated
  • Salt and pepper to taste

Instructions

  1. Cook the pasta according to package instructions for one minute less than recommended. Reserve a cup of pasta water before draining.
  2. In a large pan over medium heat, heat olive oil and melt butter. Add chicken pieces; cook for about 6-7 minutes until thoroughly cooked.
  3. Stir in diced shallot and minced garlic; cook for an additional 1-2 minutes.
  4. Mix in tomato paste and chicken stock; bring to a simmer. Reduce heat and add light cream cheese until melted.
  5. Stir in buffalo wing sauce and ranch dressing until combined, then mix in cooked pasta and reserved pasta water as needed.
  6. Finally, add grated cheddar and Monterey jack cheeses until melted. Season with salt and pepper to taste.
