Description

Creamy Chicken Pesto Pasta is a scrumptious and satisfying dish that brings together tender chicken, al dente pasta, and a rich, creamy pesto sauce. Perfect for busy weeknights or casual gatherings, this meal can be prepared in just 30 minutes without sacrificing flavor.


Ingredients

  • ½ pound Penne pasta
  • 1 pound Boneless skinless chicken breast
  • ½ cup Basil pesto
  • 1 cup Half and half
  • 1 cup Chicken broth
  • ½ cup Freshly grated Parmesan cheese
  • 1 cup Freshly shredded Mozzarella cheese
  • 1 tablespoon Olive oil
  • 2 Garlic cloves (minced)
  • 1 teaspoon Italian seasoning
  • 2 tablespoons Butter
  • 3 tablespoons All-purpose flour
  • Salt and pepper (to taste)

Instructions

  1. Boil the penne pasta in salted water according to package instructions until al dente. Drain and set aside.
  2. In a large skillet over medium heat, warm olive oil and sauté minced garlic with Italian seasoning. Add bite-sized chicken pieces seasoned with salt and pepper. Cook until chicken is no longer pink. Remove from the skillet.
  3. In the same skillet, melt butter and whisk in flour until golden brown. Gradually add chicken broth and half & half while whisking continuously. Bring to a boil then reduce heat to simmer until thickened.
  4. Stir in basil pesto, Parmesan, and Mozzarella until melted and combined. Add cooked pasta and chicken back into the skillet; mix gently to coat.
  5. Serve immediately with optional garnishes of fresh basil or cracked black pepper.
