- ½ pound Penne pasta
- 1 pound Boneless skinless chicken breast
- ½ cup Basil pesto
- 1 cup Half and half
- 1 cup Chicken broth
- ½ cup Freshly grated Parmesan cheese
- 1 cup Freshly shredded Mozzarella cheese
- 1 tablespoon Olive oil
- 2 Garlic cloves (minced)
- 1 teaspoon Italian seasoning
- 2 tablespoons Butter
- 3 tablespoons All-purpose flour
- Salt and pepper (to taste)
Instructions
- Boil the penne pasta in salted water according to package instructions until al dente. Drain and set aside.
- In a large skillet over medium heat, warm olive oil and sauté minced garlic with Italian seasoning. Add bite-sized chicken pieces seasoned with salt and pepper. Cook until chicken is no longer pink. Remove from the skillet.
- In the same skillet, melt butter and whisk in flour until golden brown. Gradually add chicken broth and half & half while whisking continuously. Bring to a boil then reduce heat to simmer until thickened.
- Stir in basil pesto, Parmesan, and Mozzarella until melted and combined. Add cooked pasta and chicken back into the skillet; mix gently to coat.
- Serve immediately with optional garnishes of fresh basil or cracked black pepper.
