  • 2 servings Udon Noodles (vacuum pack)
  • 2 tbsp Butter
  • ½ medium Onion (sliced)
  • 3 cloves Garlic (sliced)
  • 4 Shiitake Mushrooms
  • ⅓ cup Water
  • 1 tbsp Soy Sauce
  • 2 tbsp Miso Paste (white miso)
  • ¼ cup Heavy Cream
  • ¾ cup Milk
  • 90 g Beef Brisket
  • 2 Poached Eggs

Instructions

  1. Boil udon noodles according to packaging instructions, strain and rinse under cold water.
  2. In a pot, melt butter over medium heat and sauté onion, garlic, and shiitake mushrooms until fragrant.
  3. Add water and soy sauce; stir well.
  4. Turn off heat after simmering; strain the soup into a bowl and return to pot. Mix in miso paste until dissolved.
  5. Stir in heavy cream and milk; bring to a gentle boil. Cook beef brisket until just done.
  6. Reheat udon briefly before serving; transfer to bowls and pour hot soup over noodles. Garnish as desired.
