  • 4 pounds yellow potatoes
  • 2 tablespoons kosher salt
  • 1/2 teaspoon baking soda
  • 1/4 cup duck fat (or olive oil)
  • 1/4 teaspoon black pepper
  • 1 whole head garlic
  • 1 tablespoon chopped fresh rosemary
  • 1 tablespoon extra-virgin olive oil
  • 1/4 teaspoon flaky sea salt

Instructions

  1. Preheat the oven to 450°F and place a large roasting pan inside.
  2. Rinse potatoes under cold water, then add to a stock pot with cold water, kosher salt, and baking soda.
  3. Boil until fork-tender (about 25 minutes), then drain and let dry in a colander.
  4. Add duck fat to the hot roasting pan, then shake potatoes gently in the colander to roughen edges.
  5. Transfer potatoes to the pan, season with salt and black pepper, add trimmed garlic head, and roast for 55-60 minutes, tossing every 20 minutes.
  6. After roasting, mash roasted garlic cloves with rosemary and olive oil, then mix back into the potatoes before returning them to the oven for an additional 5 minutes.
