Ingredients
- 1/4 cup sourdough starter (65 grams)
- 1 2/3 cups filtered water (350 grams)
- 4 1/4 cups all-purpose flour (500 grams)
- 2 teaspoons fine salt (9 grams)
Instructions
- In a large bowl, combine the sourdough starter and warm water. Stir until dissolved.
- Add the flour and salt to create a shaggy dough. Mix by hand until all flour is absorbed. Cover with a damp towel and let rest for 30-45 minutes.
- Lightly flour your countertop and transfer the dough. Stretch and fold the dough for about 15 seconds, then return it to the bowl to rise for 4-12 hours.
- After rising, shape the dough and place it in a floured bowl or banneton to rise again for 45-60 minutes.
- Preheat your oven to 450ºF, prepare your Dutch oven with parchment paper, then slash the top of the dough before placing it inside.
- Bake covered for 30 minutes, then uncover and bake for an additional 20 minutes until golden brown.
