Instructions
- Preheat your oven to 325°F (163°C).
- In a mixing bowl, combine graham cracker crumbs, sugar, and ground cinnamon; stir in melted butter. Press into a greased 9×13-inch baking dish and bake for 10 minutes.
- In another bowl, beat softened cream cheese until smooth using an electric mixer. Gradually add sugar and flour while mixing until fully incorporated. Mix in sour cream, vanilla extract, and ground cinnamon until combined. Add eggs one at a time, mixing on low speed after each addition just until blended. Pour over crust and bake for approximately 50 minutes until set but still slightly jiggly in the center. Let cool completely.
- In a medium bowl, toss chopped apples with brown sugar, ground cinnamon, nutmeg, and lemon juice. Spread apple mixture over cooled cheesecake bars. Drizzle with caramel sauce.
- Using an electric mixer, whip cold heavy cream until soft peaks form. Gradually add powdered sugar and vanilla extract while continuing to beat until stiff peaks form. Top each bar before serving.
