  • 2 cups freshly grated cheddar cheese
  • 1 cup freshly grated parmesan cheese
  • 3 pounds Russet or Yukon Gold potatoes
  • 1 tablespoon butter
  • 3 cloves garlic (minced)
  • 2 cups heavy cream
  • 1 teaspoon salt
  • Pepper (to taste)

Instructions

  1. Preheat your oven to 350°F and position the rack in the middle.
  2. Grate the cheeses and slice the peeled potatoes into 1/8-inch pieces using a mandoline slicer.
  3. In a small saucepan over medium heat, melt the butter, add garlic, and sauté for about 30 seconds. Pour in heavy cream with salt and pepper; warm gently without boiling.
  4. Lightly grease a baking dish (9×13). Layer half of the potatoes on the bottom, drizzle with half of the cream mixture, and sprinkle half of each cheese. Repeat layers until all ingredients are used.
  5. Cover with foil and bake for 40 minutes. Remove foil and bake an additional 25-35 minutes until tender.
