  • 1 pound ground beef
  • 12 tablespoons chili powder
  • 1 teaspoon cumin

  • 28-ounce can crushed tomatoes
  • 8-ounce can tomato sauce
  • 14-ounce can kidney beans, drained and rinsed
  • 1 cup beef broth
  • 8 ounces uncooked elbow macaroni
  • 1 cup shredded cheddar cheese (divided)
  • 1 cup shredded mozzarella cheese (divided)
  • Salt and pepper to taste

Instructions

  1. In a large pot or Dutch oven, heat olive oil over medium heat. Add diced onion and cook until soft. Stir in garlic and bell pepper until fragrant.
  2. Add ground beef and cook until browned. Mix in chili powder, cumin, and smoked paprika for an additional minute.
  3. Stir in crushed tomatoes, tomato sauce, kidney beans, and beef broth. Bring to a boil before adding elbow macaroni. Reduce heat to medium and simmer for about 10–12 minutes until pasta is al dente.
  4. Remove from heat; gradually stir in half of the cheddar cheese and three-fourths of the mozzarella cheese until melted. Season as needed.
  5. Top with remaining cheese, cover for two minutes until melted completely. Serve hot with optional toppings like sour cream or green onions.
