  • 2 cups dry red lentils, rinsed & soaked overnight
  • 1 medium white onion, diced
  • 3 cloves garlic, minced
  • 1 tablespoon tomato paste
  • ½ tablespoon chickpea flour
  • 2 tablespoons Italian seasoning
  • Olive oil for frying
  • ⅓ cup tahini
  • 4 tablespoons lemon juice
  • Garlic to taste
  • Sea salt to taste
  • Water to thin
  • Fresh parsley, minced

Instructions

  1. Drain and rinse soaked lentils. In a food processor, combine lentils with onion, garlic, tomato paste, chickpea flour, Italian seasoning, salt, and pepper. Pulse until slightly chunky.
  2. Form small patties (1-2 inches in diameter) with your hands.
  3. Heat olive oil in a frying pan over medium heat until shimmering.
  4. Fry patties in batches for 3-4 minutes per side until golden brown. Drain on paper towels.
  5. Mix tahini, lemon juice, minced garlic, sea salt, and water in a bowl until smooth for the dip.
