  • 2 large Russet or Yukon Gold potatoes
  • 1/2 tablespoon salt
  • 1/4 teaspoon dried oregano
  • 1/4 teaspoon garlic powder
  • 1/4 teaspoon onion powder
  • 1/8 teaspoon black pepper
  • 1 teaspoon paprika
  • 3 tablespoons olive oil

Instructions

  1. Soak cut potatoes in cold water for 15 to 30 minutes to remove excess starch.
  2. Rinse and dry the potatoes thoroughly using a kitchen towel.
  3. Preheat your oven to 425°F (220°C) and line a baking sheet with parchment paper.
  4. In a bowl, toss the dried potatoes with salt, oregano, garlic powder, onion powder, black pepper, paprika, and oil until evenly coated.
  5. Spread the seasoned potatoes on the baking sheet with space between each piece.
