  • 4 pounds Campari tomatoes
  • 3 tablespoons olive oil
  • 1 large onion
  • 12 cloves garlic
  • 1 tablespoon kosher salt
  • 1 tablespoon oregano
  • 1 teaspoon smoked paprika
  • 1 cup vegetable broth
  • ¼ cup heavy cream
  • ½ cup fresh basil

Instructions

  3. Roast for 25–30 minutes until tender and caramelized.

  5. Blend until smooth using an immersion blender or regular blender.
  6. Stir in heavy cream and fresh basil; heat over low until warmed through.
