  • 2 servings dry instant ramen noodles (about 140 g)
  • 10 oz extra firm tofu or your choice of veggies/mushrooms
  • 1 cup water or vegetable broth
  • 57 tbsp soy sauce
  • 23 tbsp corn starch
  • 13 tbsp sugar or liquid sweetener
  • 2 tbsp rice vinegar
  • 1/4 tsp ground pepper
  • Optional: chili garlic sauce, sesame oil, minced garlic

Instructions

  1. Prepare the sauce by mixing all ingredients in a bowl until well combined; set aside.
  2. Boil water in a large pot and cook the ramen noodles according to package instructions but reduce cooking time by 2–3 minutes for chewiness.
  3. Drain and optionally rinse the noodles under cold water.
  4. In a non-stick frying pan over medium-high heat, sauté your chosen veggies and tofu until done.
  5. Add the prepared sauce to the pan and simmer for 2–3 minutes until thickened.
  6. Combine the drained noodles with the sauce mixture in the pan and cook together for about three minutes.
  7. Serve hot, garnished with sesame seeds and scallions if desired.
