- 4 cups vegetable stock
- 1 large yellow potato, peeled and grated
- 1 bay leaf
- ½ teaspoon dried thyme
- 1 can (19 ounces) white beans, drained and rinsed
- 10–12 ounces chopped spinach
- Fresh parsley and lemon juice for garnish
Instructions
- Heat olive oil in a large stockpot over medium heat.
- Sauté the diced onion and celery for about 5 minutes until the onions are translucent.
- Add garlic and cook for an additional minute.
- Stir in vegetable stock, grated potato, bay leaf, and thyme; bring to a boil.
- Reduce heat to medium, cover, and simmer for about 15 minutes.
- Add white beans and simmer for another 5 minutes.
- Stir in chopped spinach and simmer until wilted (about 1 minute).
- Remove from heat; stir in lemon juice and fresh parsley. Adjust seasonings before serving.
